It was beautiful weather today and the perfect time to knock up some refined sugar-free ice cream! When I’m at home I struggle to find sugar-free ice creams (as I live miles away from a Whole Foods or Waitrose, depriving me of my weekly dose of spirulina based Oppo ice cream), so today I decided to created my own.
I was inspired by a Deliciously Ella recipe and oh my, it’s good!! You don’t even need an ice cream maker for this and it’s as smooth and creamy as normal ice cream.
What you need:
- 6 very ripe bananas
- 12 Medjool dates, pitted
- 5 tablespoons ground almonds
Blend the almonds and dates together until fully crumbled.
Peel the bananas, chop them into thin slices and add to the blender.
Blend until the mixture is smooth and yummy!
